Launch Form and Workflow question

During a demo to my legal team we had some questions regarding the launch form and workflow:

Can 2 people be in a document editing at the same time? If so, are they notified that someone else is in the document (similar to Google Docs) so that changes aren't overridden or voided?
Is there a way to change the Sign status to Out for Signature and does it indicate which signatory we ware waiting for?
Is there a way to export the launch form responses into excel? In particular, we have certain data elements that privacy reviews, however the list is too extensive to include in the launch form and the requestor may not even have all of that information readily available when completing the launch form.
Can we add other supporting documents to the workflow for reference and/or archiving purposes (ie. privacy DPA).
