Adjusting Default Monetary Fields to other currency

Hello,

When importing contracts, I'd like the annual contract value property to be set to CAD instead of USD, which is the default. How can I change that?

I understand how to set custom currencies and total contract value within a workflow, but I'm looking for the overarching platform setting so that imported legacy contracts can be defaulted to CAD.
